Liz Cottingham
Boss Lady
Liz hails from Nottinghamshire and started her hospitality journey at just 17, scrubbing and fluffing as a chambermaid in Bournemouth.
Fast-forward a few years (we won’t say how many), and she’s owned some of the area’s favourite pubs — The Hut in Mudeford, The Fisherman’s Rest, The Hare and Hounds, The Mill at Gordleton, and more recently, The Rockingham Arms.
If you’ve had a good time in any of those, chances are Liz was behind it!
After a short-lived break (turns out relaxing isn’t her thing), she dreamed up something new — and voilà, Cottinghams was born! A little bit café, a little bit design heaven, and a whole lot of heart.

Sara
Our Vivacious Manager
From the shores of New England to the heart of the New Forest, Sara’s journey has been nothing short of inspiring. After University, she launched her career managing a portfolio of vacation homes in the U.S., where she fell in love with the charm of the East Coast — and her husband of 27 years!
Returning to the UK, Sara brought her talents to the skies, working as a Corporate Account Manager for major airlines.
Fast forward 13 years ago, Sara and her family settled in the beautiful New Forest. It was here she met Liz — and as they say, the rest is history! For over a decade, Sara has been a trusted part of Liz’s team across several of her ventures.Those who know Sara adore her infectious giggle, playful banter, and razor-sharp wit (you’ve been warned!) .
When she’s not keeping everything running smoothly, you’ll likely find her in a yoga studio or enjoying the sea breeze at the beach.

Lynnie
Meet the one and only Lynnie! Originally from sunny California, Lynnie has been close friends with our beloved Liz for over 30 years — talk about friendship goals!
With a lifetime of experience in food and catering, she’s now legendary around here for her mouthwatering scones — seriously, if you want one, get in early… they disappear FAST!
When she’s not keeping us all in check (with a smile and maybe a sassy wink), she’s busy loving life with her kids and adorable grandson — the true apple of her eye.
Oh, and her passion for healthy, nutritious food? Almost as contagious as her cheeky, unforgettable laugh!

Edyta
She arrived from Poland in 2004, and by 2005 she found herself working for Liz at The Mill — with zero experience in hospitality (brave or mad? We’ll let you decide).
Thrown straight into the legendary “Liz School of Hospitality” (poor girl never stood a chance), Edyta learned fast and never looked back!
When she’s not being a superstar at work, she’s a full-time supermum to two gorgeous kiddos — and somehow still finds time to dive head-first into DIY projects like an absolute boss

Lucia
Our Shining Star!
Lucia originally joined us for a few Saturday shifts while studying Sports & Criminology at Peter Symonds College — and wow, has she flown!
She’s an absolute ray of sunshine — always smiling, full of energy, and adored by our customers (and us!). Whether she’s chatting with guests or lighting up the room with her bubbly vibe, Lucia brings her A-game every time. Outside of work, she’s a total sport fanatic, a foodie at heart (thanks to her Italian/Spanish roots), and never says no to a sunny holiday — Portugal is a fave!
We’re SO lucky she’s doing more hours with us over the summer. We honestly couldn’t imagine the place without her!
